Salmon Oat Cakes

Ingredients (2 servings)
1/3 cup egg whites (1 serving)
1/3 cup oats (Old Fashioned)
Leftover poached salmon (use smoked salmon or any kind of cooked salmon here)
1.5 tbsp (eyeball this) fat free cream cheese
1/2 tsp baking powder
Salt/pepper to taste

Things to consider adding: scallions, garlic, dill?

Break up the salmon as finely as possible without putting in too much effort.

Mix in remaining ingredients and try not to be put off by how gross it all looks.

Use medium heat to preheat a pan. Spray the pan down with Pam.
Spread out 1/2 mixture (or 1/4 for 4 small cakes) and wait about 2 minutes.

Flip about 1 minute after the cake can be easily moved about on the pan.

The oatmeal, cream cheese and eggs add about 150-160 calories (2 servings), so guestimate how much salmon you are putting in, but in the long run, you're looking at less than 200 cals/serving.
