Begin this one with some fresh or defrosted salmon filets (or steaks, whatever you have on hand)
As I learned (probably way too late in my life) poaching is a lot like boiling. No oil, no butter, no fishy smell =)

Get a nice big saucepan on the stove and toss in: 
1 big chunk of peeled ginger (chopped)
1 small onion (chopped)
A handful of peppercorns straight from the grinder
Generous bit of salt.
Eyeball all of these ingredients because they're there for flavoring. Too much can't hurt.

Boil the water without the salmon for at least 10 minutes to let all the flavors seep in. Then turn the heat down to medium and allow everything to begin to simmer.

Carefully drop in the salmon and wait for 7 minutes (8 minutes for more "well done" fish)

Done, salmon poached. Such an easy cleanup.

Pair with a nice beautiful summer sauce (look how green!)

For 4-6 servings (decrease by half for 2-3)
1 cup Greek Yogurt (0% Fage Total)
Two big handfuls fresh basil
Zest and juice of 1 lime
Salt, pepper, lemon pepper seasoning to taste.

**In the future will consider adding mint**

This is a his and hers dinner (hers is smaller, duh!) with sesame green beans.

Bet it would go just as well with brussel sprouts.
