Omelet Muffins


These come in at just about 100 calories each (with toppings, though obviously calorie load will depend on which toppings YOU choose. There is no oil OR butter in this recipe!
Ingredients (makes 8 muffins)
4 eggs
1/3 cup whole wheat flour
1/2 tsp baking powder
1/4 cup ricotta cheese (part skim, all skim, whatever)
1tsp salt
1tsp black pepper
**Add omelet toppings**

Add any toppings you like in your omelet: smoked salmon/dill/cream cheese, smoked meat/cheese/tomato, tomato/spinach/feta....go nuts.

I made this one with salsa and feta cheese because I had it on hand.
I would say 1/3 cup black bean and corn salsa, 2.5 servings of fat free feta cheese.
This batch makes about 8 mini muffins (1/2 egg in each, about 100 calories apiece)
Note: I have a plastic muffin "tin" (see below) so I just spray it with some Pam before cooking.
**This recipe has NO oil or butter!**

Fill muffin "tin" almost to the top, these don't rise that far.

Bake at 375 degrees for about 20-30 minutes until you see them rise and the tops harden a bit. Done when an inserted toothpick comes out clean.

These were oh-so-moist and really tasted a LOT like the Dunkin Donuts Egg White Flat Bread.
