The recipe immediately below is for a MINI sized oatmeal apple pie, based loosely on 1/3 of the recipe of the Oatmeal Breakfast Bars. Further below is a recipe for a larger, 10-12 portion pie.

Mini Pie Ingredients (serves 2-3-4)
1/2 cup oats-this is Quaker Quick Oats (150 cals)
1/8 cup + a little more walnuts, chopped (100-125 cals)
Slightly less than 1/2 cup Vanilla Slender Soy Milk (my new fave!)-35 cals
2 oz egg beater (=1 egg)-25 cals?
1 tbsp cinnamon, sprinkle of ginger, dash of salt
Sautee: 1 Granny Smith apple, chopped + 1 tbsp margarine + 1 tbsp brown sugar
Add: artificial sweetener/caramel sauce/sugar, whatever you like.

Mix everything together in a bowl and bake at 375 degrees for 45 mins or more (test by sticking a toothpick in to see if it comes out clean)

The inside should really look cake-y and it tastes pretty decadent!

Calories: under 150 if you split this into quarters.

This was a huge huge hit. Highly recommend.
