Baked Potatoes

Baked potato: a classically healthy food that gets un-healthified all the time by the addition of butter, sour cream, chilli and processed cheese. But it CAN be a healthy, filling warm meal accompaniment (or even a small meal) if you do it right.

I don't ever have time to wait for a potato to bake in the oven for 40+ minutes so I always microwave my "baked" potatoes. ALWAYS REMEMBER TO POKE A FEW FORK HOLES INTO THE POTATO BEFORE MICROWAVING!
It usually takes about 4-6 minutes for it to finish (I start with 4 then poke it to see if it's soft and put it back in for more time if it is not). 

My latest baked potato venture included a low fat alfredo sauce as the seasoning (at 60 cals per 1/4 cup, but I only used 2 tbsp or so) with some S+P. At other times I've used a honey mustard dressing and even simply some I Can't Believe It's Not Butter with S+P (or garlic, or all the above). Also doable: Greek Yogurt+chives/scallions. Fat Free Cream cheese works well too.

On the bottom is a Korean Sweet Potato, which doesn't need much in the way of seasoning at all. Some butter subsitute and salt is all this baby needs. This potato was HUGE so Boyfriend and I split it (hence the two spoons). A little turkey sausage on the side never hurt anyone =)
