Roughly chop about 1.5 apples (Granny Smith are the best) into little cubes.

3/4 cup vanilla slender soy milk: ~60 cal
I also added in Caramel syrup and Sugar-Free Maple Syrup.
This recipe made 12 almost-full muffin cups and made 12 VERY dense but tasty muffins. Think bran-apple muffins.

Make sure to keep an eye on these in the oven, they rise fast. Insert a toothpick into them to see if it comes out clean. If yes, the muffins are done. =)
They come out to be about 140 cals each (with I Can't Believe It's Not Butter and artificial sweeteners)
