Super easy meal to throw together for a simple night dining in or even for company. Portion sizes can be increased so easily it works for various occasions. The best part is that it's pretty healthy and light and is even sort of fancy!

Ingredients (Serves 4)
Bunch pasta (you can portion it out into 4 servings)
20-24 frozen shrimp (thawed, seasoned with salt/pepper or any marinade)
1.5 medium zucchinis (chopped)
1 tomato (chopped)
2-3 servings (2/3 cup?) tomato sauce (I like something with herbs and spice)
Parmesan Cheese for topping

Instructions
Cook pasta as per directions on box until al dente
While pasta cooks sautee the shrimp until just pink (toss them around in a Pammed pan for about 3-4 minutes)
Set aside shrimp and sautee zucchinis until tender (5-10 minutes) and then toss in the chopped tomato and tomato sauce. Allow all this to simmer for a while until it's beginning to reduce.
Once the sauce is beginning to thicken, put the shrimp back in. Continue to simmer ~4 minutes.
Hopefully by now the pasta is done and you can just serve it all up together in a bowl topped with Parmesan cheese! =)
