Of course, the goal is to fold it in half and cut it up into triangles, but I'll confess I ate this guy open-faced!
General omelet instructions: Start with eggs (or egg substitute) in a small bowl. Season with salt and pepper and if using salsa, beat that in there as well (I recommend using at least 1 tbsp salsa in ANY omelet!). Make sure your pan is SCREAMING hot and sprayed with Pam before putting the egg mixture in. Be patient, let the edges get a little white in color before beginning to push the edges of the omelet towards the center of the pan so the liquid in the middles runs around the edges.

Ingredients
A few small pieces of leftover chicken or 2 slices of deli meat of your choice
2 large rehydrated shitake mushrooms (or other mushrooms of your choice)
1 Laughing Cow Light Cheese Wedge (spread underneath)
3-3.5 servings Egg Beaters 100% Liquid Egg Whites
2 tbsp Black Bean and Corn Salsa
On top of 8-10" tortilla
Put some arugula on top before folding it in half to get some "green" flavor.

Ingredients
2-3 servings egg whites
Handful of chopped mushrooms (these are leftover portabello mushrooms for a dinner)
LOTS of pepper
Salt, garlic powder
Underneath the omelet I spread 1 triangle of Laughing Cow cheese.

This also comes to about 300 cals. but is really a very satisfying meal!

I cut this one up into quarters and ate it open-faced, which I suppose actually makes it more like a breakfast pizza! (Even better!!)

Ingredients
1.5 servings Egg Beaters (All Whites)
1 serving turkey kielbasa (or smoked meat of your choice)
2-3 tbsp salsa
1 Laughing Cow Light Blue Cheese wedge (spread underneath the eggs)
1 wrap (I use a whole wheat 60 calorie 8-incher)
Damage: just over 200 cals. Yum!
