On the side of any box of falafel mix (yes, I used the boxed kind!) there is a small panel telling you how to bake instead of fry the falafel.
This is what the mix winds up looking like after addition of 1.25 cups water.
Wait 10 minutes. Preheat oven to 375 degrees.
Spoon or shape into little balls on a greased cookie sheet (lined with foil or parchment)
Cook in oven for 10-12 minutes, flip each ball and cook for another 10 minutes.

The box always calls it 12 servings, but I generally wind up with 14. Each ball (pictured here is one broken up) comes out to about 90 calories.
I loved putting them on a wrap on a bed of spaghetti squash and spinach. Doesn't even need a condiment!
Obviously, this would also go pretty nicely with the oil-free "Hummus" (made with feta cheese) or Baba Ganoush (also fat free).
