Use 1 big potato (or a medium), wash and piece thi skin a few times.
Microwave on high for 4 minutes (or 3 minutes if using a medium)
Careful, it will be hot!
Slice it down the middle, scoop out the insides into a little bowl and throw the skin part into a toaster oven (at 375 degrees)
While the skin toasts, microwave a piece of turkey or beef bacon (or sautee).
Put 1 tablespoon of chevre (super-soft) goat cheese and a splash or two of skim milk into the potato insides. Stir.
Chop the bacon into smallish pieces and stir into the potato mixture too. Microwave all of this on high for 1 minute.

Take the skin out of the toaster oven and place the potato-cheese mixture inside. Bake at 375 for another 5-10 minutes.

This is definitely something I made for Boyfriend because it comes in at just under 400 calories and that's a little too much for me for one food item. If I WERE making it for myself I would probably use some sort of part-skim cheese or use non-fat cream cheese with scallions or chives instead of bacon. This makes a whole different potato (more like 300 calories).
